Amuro is opening Aenza, a Japanese wine bar, one minute up the street
Owner-chef Joy Liu doubles down in Darlinghurst with a venue more than twice the size of her acclaimed saké room.
Amuro's regulars have been asking for a venue like Aenza for years: same chef, same considered approach, but with the volume turned up. Owner-chef Joy Liu's second room opens one minute up Crown Street from her acclaimed saké bar and offers more than double the seats, a 14-metre concrete counter and a list that leans heavily into Japanese natural wine.
The kitchen will run a small charcoal grill and a cold section dedicated to seasonal sashimi, with a snack menu designed for solo diners to walk in without a booking. Liu has hired ex-Cho Cho San sous chef Sayaka Inoue to run the pass.
Aenza is scheduled to open mid-July, with a daily 5pm-to-late service.
