Sydney's new underground '70s-style Daiquiri bar comes with a 4am licence

Sydney just got a hot new underground Daiquiri bar hidden below the CBD. Called Razz Room, it's from the team behind one of the city's busiest late-night cocktail rooms and lives down an unmarked staircase off Kent Street, opening at 8pm and trading through to a 4am close.

The room is small, mirrored and almost entirely red-lit, with a marble bar, a vintage rotary phone for ordering and a live disco set on Friday and Saturday nights. The cocktail menu is built around the Daiquiri — twelve variations, from a brown-butter banana riff to the much-discussed 11/10 Dirty Daiquiri with fino sherry and olive brine.

Razz Room is the latest in a wave of late-trading CBD openings — see also Sakura House and Bar Bruno — that are quietly rewiring the city's post-midnight scene.
