The team behind always-busy Gilson have announced their next venue: The Frog Club, a late-night grill room designed to catch the post-service hospitality crowd. The 90-seat room will open on Toorak Road this spring with a kitchen running to 1am and a bar that will trade to 3am Thursday through Saturday.

Expect chargrilled lamb chops, a single-cut steak frites special, a serious Martini program and a wine list that will lean heavily into Beaujolais and Jura. The fit-out is deep green leather, brass and an open kitchen sized for high-volume late trade.

It is the third venue in the Gilson stable and, group operations director Felicity Hayes says, 'the one we've been waiting to build for five years'.
